So this was our dinner last night.... If this bores you, skip to the next thing, but it really helps me keep track of what the family likes and what the recipe is if I blog about it. Then I can easily go back and find it!!

Slow Cooker Chicken and Dumplings
4 skinless, boneless chicken breast halves2 tablespoons butter2 10.75-ounce cans condensed cream of chicken soup, undiluted1 14-ounce can chicken broth1 onion, finely diced1 10-ounce package refrigerated biscuit doughPlace the chicken, butter, soup, broth and onion in slow cooker. Cover, and cook for 5 to 6 hours on high. One hour before serving, open biscuits. Roll each one to be about 1/4-inch thick and cut into 1/2-inch strips. Add to the slow cooker, laying on top of chicken and liquid. Overlapping strips of dough will occur. Continue cooking until the dough is no longer raw in the center, about 1 hour. Note: Dough will not cook into biscuits as you might think. It will become like traditional dumplings. Serves: 6 to 8.

I got this from an email from Everyday Cheepskate. And here is what I did different... I didn't take the time to roll out those little biscuits - I used two packs of the little kind.... And I used the dinner roll variety, not the buttermilk biscuits... I just smashed them down and then I cut them up - even easier! I doubled the whole thing and it filled the crock pot nice and full.

Let's see, All four of us ate two giant bowls on the first night. I had two bowls for lunch the next day, and we all ate it on the second night again. So I would say it makes about 16-18 servings. Oh, the second night I watered it down with some more water and boullion and added another small can of biscuit dough, and there is some left, so if you doctored it, it could serve 20-24.

Weekend Treasure

  Here are some stock photos of the love seat, chair and ottoman we purchased on Saturday at the auction.  These pictures don't really do the set justice.  But we have determined that the retail price for these now discontinued pieces was $1899.  We topped out our auction at $500.00, so after sales tax and the 15% auction fee, we did pretty well.. paying approximately 1/3 of retail. As an added bonus, they were sold to us as "durahide" which means fake.  Frank and I used to say that Nogahide should have been named NOTaHide.  But after looking them up, they are 60% leather.. the parts that don't matter -the back, are not.  BONUS!  They are now all safely home and put away... where you say?  Where could you possibly have put all these lovely pieces of furniture? The Fourth

The Fourth didn't feel much like the Fourth here in Hawaii.  We were very surprised!  New Years Eve is a huge time of fireworks all around the beaches and everywhere you go.  But the Fourth, not so much.  We could have gone to one of three large fireworks shows on the islands, but we didn't feel like fighting traffic and people.  We opted for a drive around the island to explore new sights and places.  We drove through Hale'iwa town and investigated some kayaking rental places for later in the week.  We headed on up the island and around to the Turtle Bay area.  Years ago, my folks were blessed to be able to use a condo over in this area and always came home talking about the shrimp trucks.  If you know, or knew my folks, you probably know they aren't really "taco truck" sort of people.  However, we stopped at fumi's and picked up 2 pounds of fresh uncooked shrimp.  Never frozen, people!
